I find the cashews are more flexible use wise, nutritious, and filling. You can get away with not soaking if you have a really good blender for some recipes, but it's not worth it, and your end results will change more compared to starting with soaked cashews.Įven if dairy was okay for me I would and will never go back to using dairy for cream soups, sauces, spreads etc. To get a truly smooth silky constancy you do need a decent blender, and don't forget to soak the cashews before making dairy alternatives. Raw cashews have the least amount of flavour (compared to something like coconut cream) and thicken up sauces/soups/spreads etc beautifully due to the natural starches in cashews.
